Foods with a GI of less than 55 cause a small blip in blood sugar; those in the 55 to 70 range raise it a bit higher; and carbs with GIs of more than 70 send blood sugar through the roof.
Besides helping you control your blood sugar levels, choosing foods with a low GI can also help you lose weight. That’s because low-GI foods are digested slowly and help prevent the spikes in blood sugar that can cause food cravings and lead to weight gain.
If you do choose a high-GI food, try to combine it with a low-GI food or a food that is high in protein or fat. This will slow the absorption of the high-GI food and prevent your blood sugar from rising rapidly.
Foods listed in italic type are high-GI foods that you need not avoid; these foods, such as carrots and watermelon, contain important nutrients besides carbohydrates.
Foods listed with an asterisk are low-GI foods that are best eaten sparingly; these foods, such as potato chips, are high in fat or calories--and don’t offer much else nutritionally.
